Fennel

Fennel is very versatile seeing as the chopped stems and the leaves can be used as an aromatic herb, the seeds can be used as a spice and the bulb as a vegetable and in each case it has a distinct intense flavour and aroma of aniseed.

The seeds are used when they are dry and they can be added to a series of dishes such as curries (in this case they are ground), bread, cakes, fish (herring, mackerel and salmon) and cakes.
